One lemon, cut into wedges, for garnish

1. Shuck the oysters using an oyster knife. Scrub the inside of the deeper shell.

2. Brush the inside of each shell with a generous amount of melted butter. Spread a layer of cooked spinach on each shell. Dip each oyster in Worcestershire sauce and place on top of the spinach. Sprinkle each oyster with the remaining melted butter and top with grated Gruyere cheese.

3. Place the oysters in a shallow pan or on a cookie sheet. Broil until the edges of the oysters curl and the cheese is bubbly and golden brown.

4. Serve on a bed of sea salt with lemon wedges.
