Nopales are the paddles of the prickly pear cactus. They’re thick and meaty, with a mild flavor that’s a cross between asparagus and okra. A staple in many dishes found in central Mexico, nopales can be found most commonly in salads and tacos. At Taqueria El Chaparrito, the nopales tacos are served on soft corn tortillas with onion and cilantro.
